A decadent lunch

Strictly speaking, this is not really a recipe, more like a way to combine some food items to get at something that I'm sure I'll be tired of any day now, but it hasn't happened yet.

About beans: I found that if I cook them in a pressure cooker, I can skip the soaking stage (and cook them longer) with no ill-effects.

About flavored vinegar: you can put vinegar in a small bowl and add things like chopped onions or chilies or garlic and get interesting results in a relatively short time (about 30 minutes is good enough).

Procedure

Pile up the ingredients in order on a plate, seasoning each layer except the last one (cheese) with salt and pepper and lime juice as desired.
